While I was Out...

... I wet my feet with some Crossfit, for about a month or so. While I did not lose any weight, I did get stronger and it was a lot of fun. It was getting pretty pricey and the hubbie was in the process of getting certified as a personal trainer, and of course I was bound to be his first client!!

Allow me to introduce, the two most adorable little models in the world-- Meli and Jazi. My niece and her best friend. This was us playing grown up dress up, courtesy of aunties closet. They picked a few pieces and took turns wearing it rocking it. WE HAD A BLAST!
Then we picked something from her own closet, and funked it up with a cool hair-do and some accessories. The last outfit (not pictured), turned the photo-shoot into a gymnastic party. Meli has been in gymnastic for the past year or so, and she just loves showing me all the tricks she can do. As a former cheerleader and PROUD auntie, I love pushing her to her limits and teaching her new tricks. We've master front & back walkover and she is only 5.
Yes, I'm that kinda of the cool auntie! I'm a not-soon-to-be mommy in training. For some reason I'm fairly certain Maurice Junior will come first, so I'll have to do my homework on how to get down and dirty with the boys. I can also just watch learn from dad, he's been roughing me up for a while :-) and I always tell him he needs him a son! I must tell you, it has payed off (and all our friends pressuring talking sense to him about kids), we now have a date for when we will get off the pill and start trying.
I can't wait to take weekly pictures, and plan a co-ed baby shower, decorate the nursery, the delivery, bringing him home, a year of firsts... and the list continues. I'm sooooo ready!!!!!!

My Very First Time in the Casino Scene

Super brownie points for the hubby!!! He planed the whole trip on his own and manage to surprise me up to the point we drove up to our hotel.
We stayed at the Ameristar, which must I say, it was soooooo gorgeous!! We had such a great time... We got in late evening, had dinner, went to the pool and called it a night. We slept in, went down for breakfast and the gambling begun. We started off at the slots machine and made our way to the electronic roulette table, which was my absolutely favorite!!!
After burning a little $$$ we went exploring. We crossed the street to the older part of Blackhawk, aka Central City. Back to the slots machine, contemplated played on a real roulette table, and made it back to our hotel for some more roulette.
I'm not sure where the picture went, but this was all I could find :-(

Meal Planning

I think I've been neglecting my blog enough and since I'm about to start getting into my routines, I thought it's time to sneak blogging into it too. With student teaching and working, mine and the hubbie's schedule will get a little difficult to juggle and coordinate and i'll most definitely have to meal plan and strictly follow a schedule. SO.....
Here is my attempt (once again) to meal plan for the week. It works wonders when I do keep up with it, but for some reason I just get caught up with everything else and get uninspired to just do it. Now, I do have to warn you, I don't follow recipes to a "T". I usually look it up and make sure there isn't any essential ingredients and make it up as I go to taste.
So here is what i'll be making this week (sorry, I didn't take pics this week but i'll be posting how I made it as the week progresses):
Shrimp Pesto Ravioli
I used wonton wraps for the shell and for the filling chopped ricotta, sauteed shrimp and spinach. I boiled it and baked for no more than 10 min with pesto sauce and parm cheese as garnish. It didn't think it look all that good so no pics but it tasted delish!!! I did however Google'd pesto ravioli and it looked pretty similar to mine. We ate it with a green salad.
Fried Chicken
I usually don't fry my fried chicken, I bake it. But this time, since the hubbie requested it, I thought i'd give in into the greasy goodness. All i did was season the chicken, shake it into flour, and deep fry it. I must say, i much rather bake it any day--I was so afraid it was going to be under cooked that I ended up cooking it too long, and it turned out kind of dry :-( We ate it with mac&cheese and peas and corn.
Fish Tacos
So easy and yummy! I sauteed cod fish on a bed of blend mixed veggies (onions, red and green pepper), and seasoned it with salt and pepper. Since the fish was frozen, it collected lots of water, so I cooked it until it dried, shredded it and served on soft corn tortillas garnished with cheese and tomatoes. We ate it with Cajun rice and beans.

Buffalo Chicken Braid
Simple and successfully delish!!! Also pretty... All u need is a few chicken breast sauteed in hot wing sauce (I sweetened mine with a little bit of bbq sauce), pizza dough, and cheese. Now I embellished mine with spinach leaves as well as cream cheese.

Friday Sucked but Life Goes On...

How was everyone's weekend? I wish I could say mine was wonderful, given that I had so much fun at the football game on Saturday night, but I kind of had a crappy start of the weekend, and I spent my Sunday studying for a History test blah blah blah... It's was reeeeeeally windy here In the Midwest Friday and I was on my way back from the grocery store... Going off an overpass, a wind gusts hit the back of my car and it made me spin around , threw me over the median and hit the rail on the opposite side I was going... Ended up thrashing the whole front of the car. I guess the motor moved back three inches.. Fortunately and with GOD's grace i'm okay, only neck is bothering me. Now, off to car shopping again... I must say, GOD is good and know why he does things... We didn't have to get the new car a couple of weeks ago, but for some reason we did.. and what you know, if it wasn't for that we would just be stranded and out of luck left to spend more money that we have renting a car while car shopping... So even though it still suck that the car is totaled I still praise the lord that he always provides and never puts us in a situation we can't handle.
On to my outfit...I been wanting to show this skirt off because it was a great find, but I haven't worn heels to work because i'm afraid I won't be able to handle it, so for a rule breaking Monday I decide to go for it (with flats) even though it made me look short and stout :-)

Day Numero Cinco & Last (but of Course not Least)

Turns out I have more stripes than I thought. YaY!!! for stripes!!!!
Today was my first day of work and I couldn't be happier. After almost eight months without working, and a semester outside of the classroom being around kids was so much fun. Soooo for details about my new job... I'll be spending my afternoon with elementary age children at our local YMCA after school program called Fun Club. Now onto looking for a morning job :-) . Why, you ask? Well, we just got a new car!!! This week has been a blessing (besides the concussion that is). We've been looking for a while, and me getting my job was just the icing on the cake and what made us speed up the process.

Wearing it on My Sleeves

Today was very uneventful day but I do have more good news!!! On Monday's game the hubby too a pretty hard shot to the head which lead to him having a concussion. He decided not to tell anyone he was seeing double at the game and continued to play. He slept the whole ride (which his teammates teased him after because it was so loud), really unusual for him and not recommended if you just had a concussion. Anyways, we slept and rested pretty much all day Tuesday, and his only symptoms were a mild headache and nausea, which we usually justify it with post game fatigue. On Wednesday however, he woke up dizzy, with a worse headache and we notice a popped blood vessel on his left eye, besides him being forgetful.
He still went in to work, but left early to go see a doctor. Since his symptoms were a bit delayed, being that the injury was on Monday the doctor prescribed a CAT scan to make sure there wasn't any bleeding in his cuca (word in my dictionary for brain/head). We tried to get the CAT scan done yesterday but it wasn't possible, so we went in today. I was super worried but thank GOD everything came clear and he'll be able to go back to his normal routine on Monday. Unfortunately that means he won't be playing this Sunday, but I'm glad he gets to rest it, rather than ignore it and have a more severe injury.

PROcrastination {believe me, I'm a pro at it}

I woke up at 5 30 today and with a history test coming my way (uh, like tomorrow), you would think that I've used my time wisely and I'm being as productive as I can be. Well wrong :-( I've done absolutely nothing (besides eating) !!!! Procrastination has yet to become my worse enemy, but I seriously need to take care of this little strength habit of mine. I know my limits and I always get things done on time (yes, sometimes at a later time than intended), but never late. I also tend to get distracted fairly easily (when it comes to avoiding a task) and I take on tasks that should be last on my list. For instance right now, instead of writing an essay which is part of my exam tomorrow, I'm blogging!!! It's now 1pm and I should probably get started before the day goes by and I get stuck with a long night of studying.
Anyways, I thought the outfit from today photographed really well, but was a bit of a pain to wear.. I had to keep readjusting the shirt (maybe because is a bit loose on me), it kept riding up and looking sloppy. I'll have to think of something to secure it or put it to rest. On the other hand, I was dying to wear my knew high socks and I don't think I could've been happier with the look.

It's Danger Time!!!!!!

Remember back in this post, when I told you guys my hubby signed with the Danger??? Well it's been a long time, but their season is getting ready to kick off on March 7th, and tonight was the scrimmage. (Sorry guys, it's about to get cheesy!!!) First I would like to say, he did an outstanding job, just like I knew he would!!!! Tonight was a big night, they'll announce the final team tomorrow I believe. He was so blessed to get an opportunity, and he delivered. Of all places, a team was born 30min away of where we are!! I'm praying he will be on the final starting roster (that would put him on a really good spot to get scouted to a higher level, which is his dream). It would truly mean a lot to him, he's been working so hard his whole life. He has such a great work ethic, with the grace of god the sky is the limit!!! I'm so proud of him and so thankful that he is willing to work so hard to provide a better future for us.

Pop of color!

Pictures are getting a little bit better don't you think? But this was not my intended outfit at all, I started off with a different top because I wanted to wear a cardi but it did not look right at all with the skirt so I changed... This black top kinda made it look like a dress, but I was pleased with the over all look so I kept it. I heard it was going to be warmer today, but wasn't sure how much warmer. I was definitely too covered for the weather, really wished I wasn't rushing out of the door to come back an change; me and the hubs will be going on a movie date tonight (to see none other than Justin Bieber!!!!! I know right ?! how did I convinced him? he was actually the one who wanted to go see it--he is into music like that and i'm just a kid in my heart and I like all things Disney :-) anyways, so maybe I'll redeem myself and take advantage of the nice weather.

I feel like...

I've been neglecting my blog for the past couple... As you know I didn't have class so, I was really not trying to do much (that's my lame excuse this time). Remember the cleaning I was going to do? Didn't happen! Are you surprised? Please don't be, you'll prob hear that a lot from me... anyways in the mist of uneventful three days with no classes, I did of course managed to step in the kitchen and experiment a little (nothing out of the ordinary thou) and I also did go somewhere yesterday so I'll be posting an outfit...
One of the nights I made quesadillas, and they turned out just like I wanted. You see, I always just make them on the stove top griddle, and they are just fine, but not to long ago Kirstin @ What Happens at Naptime posted this really gorgeous crispy looking BBQ chicken and black beans quesadilla that I just had to try. I did not follow the recipe (again hope you are not surprised), but I did butter the tortilla and made it on a skillet this time. The result? See for your self!!!!
I think they looked how I wanted and it tasted even better... Now that I've mastered the crispiness, I will have to try the chicken and black beans recipe though, it's just too good to pass.
Another thing I mixed up in the kitchen this week was chocolate chip waffles. I love making waffle sandwiches at anytime of the day and instead of mayo I use cream cheese. I'm not a fan of syrup so this time, it left me with plain chocolate chip waffle, so since I can't contain myself from experiencing, I decide to spread cream cheese anyways like the usual and it wasbetter than I expected deli-sh. I'm pretty sure I'll be gaining a few pounds from eating that for breakfast (no bueno).

So long January!!

My goodness, where has this month went? It seemed like just last week that things were getting back to normal from the holidays... and once again I promised to post more often. I always spend so much time blog hopping that I end up getting tired of staring at the computer screen before I get to my own.
I've been wanting to change up my blogs' face for a while but didn't want any of those pre-made ones. Although there is still a lot of work (I just got some tips from one of my favorite blogger), I can live with what it looks like right not until I create something totally on my own. I also added some pages, which I will be working onsoon slowly but surely, due to my unexperienced in the blogging world.
Anyways, school started today and I am really out of shape as far as getting up early and been on a schedule so I'm exhausted. I had planned to post about a recipe that I reinvented but Iguess will do it next time...

Cheers to a New Year!!!!

I have to say I’ve
been doing well with my non New Year’s resolution. I don’t like to called them resolutions, it
makes me feel less of a quitter if I skip a day or two. I have this theory that if you just go with
the flow, you won’t be tempted to cheat obligated to finish and feel
like a frailer if you don’t “finish it”.
I also like to keep my list short and sweet, again merely for the fear
of failure...
If you read my previous post you found out that I decided to join Lindsey at The Pleated Poppy once again with the WIWW linky party. I just got so busy with school last semester that I had to sacrifice updating my blog; but now I’m backfull force in action...
Now I have the whole month of January free and only a couple of class
the following semester, so as hectic as it will get I think will be able
to handle (if everyone else can juggle their lives and blog, I can too). Aside from my WiWW weekly updates, doing
little projects here and there and trying new recipes (I made a cake today,
check back for the recipe).
I’ve also been trying to work on a new design for the blog, but I’ve yet to put together something I like as much as the one I have now. Yes, that explains the funky fonts lately. I just can’t decide so on one so I try and compare them after I post. What do you think? Should I just keep it simple with a standard font? It’s kind of hard to judge because I don’t have a set design, but even with this one. I like to just change it up....

I seriously need to stop apologizing for not blogging for long
periods of time and just do it...
So in the attempts to make up for the lost time; since 2010 has
come to an end, here is a cliffnotes version of highlights of my year... (when
I say cliffnotes I mean it, I have a horrible memory :-( I think up to an

Great News!!!!!!!

As you may or may not know, my hubbie has a passion for football ever since he was 9 years old (hence his football number :-) Last Sunday he went to his third (certainly not the last one) pro football try out as third is the lucky charm, he MADE IT!!!!!!!
He signed with them right on the spot... The Nebraska Danger!!! I was so proud of him. He always performs but the opportunity door was a little rusty and took a little bit to open, but now the sky is the limit and I know his talents will take him far.
In honor to them and a bit of me just been a nerd this post is bi-color ;-) I'm so excited for the season and I'm already pulling out my high school pride gear as it is the same color of the Dangers!!!!
With all the excitement comes of course some worries and concerns. It is an indoor league, meaning he will be pushed into a wall as opposed to running out of bounds.. Yikes!! I will be one angry wife, yelling at those who dare to do that to him(not excited for that at all). Another thing on my list is their logo. It's a skull, which I am not a fan of excited for at all.
Hey for every party there is a pooper right?(excuse my language) Here is the little sucker logo, which I don't really know what the mascot will be called, but we shall see. I do hope they eventually have cheerleaders. Maybe I'll have a shot?!?!?
